Here is a nice side dish that goes well with any meal! OR if you are a vegetarian, you can eat this as a main dish as well - just add a nice source of protein like pine nuts, chick peas or black beans.
1 Large zucchini
1 Large summer squash
1/4 Cup fresh, chopped parsley
1/4 Cup sun dried tomatoes (get sulfite-free)
1/4 Cup Green onions, chopped
1 Tablespoon minced garlic (or if you are a garlic lover like me, I use 2 Tablespoons)
1 Teaspoon oregano
1/2 Teaspoon basil
Salt/pepper to taste
First thing I do is spiral my squashes with this little gadget! Takes no time at all.

Add everything in a bowl and stir it all up. Set aside.
Get a fry pan and add 2 tablespoons of olive oil....let the pan get hot.
Throw everything in the pan. Saute until squash is tender with some golden brown color too it. It can burn quickly since it's so thin so make sure you stir and don't walk away.
